The market

Thailand's specialty boom is real. Almost none of it leaves the country.

Domestic demand has outpaced supply for years, so the majority of Thailand's specialty-grade coffee never reaches international buyers — farmers favour stable local relationships over the complexity of export. For roasters and importers abroad, the hard part isn't whether Thai coffee is good. It's getting a direct line to it.

฿65BThai coffee market, 2025

A domestic market now worth 65 billion baht, per Thailand's Ministry of Commerce.

340Cups per person, per year

Consumption has nearly doubled from 180 to over 340 cups a year — almost half of Thais drink coffee daily.

88+Cup of Excellence scores

At the 2025 CoE competition, the country's top 15 lots all scored 88 points or higher.

20thLargest producer, and rising in quality

Thailand grows modest volume, but arabica is expanding as farms shift sharply toward specialty.

The cup

What Northern Thai Arabica tastes like

Grown between 1,200 and 1,500 metres in the mountains of Chiang Mai and Chiang Rai, on varieties like Typica, Catuai, and the local Chiang Mai hybrid. How a lot is processed shapes the cup as much as where it's grown — here's what to expect from each.

Washed process

Cocoa, red apple, lemon zest

Clean and bright, with a crisp, tea-like finish. Our most versatile lot — it shines as a filter coffee and pulls a lively single-origin shot.

Natural process

Plum, purple grape, treacle

Sweet and fruit-forward, with a syrupy body and a soft cocoa undertone. The one for a shop that wants an origin their regulars will remember.

Honey process

Toffee, biscuit, hazelnut, sultana

Rich and rounded, with a silky texture and a long, sweet finish. Sits beautifully in milk without losing its character.

Custom roasting

Roast styles we build with you

Prefer to buy it roasted? Our roast master develops a profile around your menu and your machine — not a generic curve off a price list. Whole bean or ground, roasted fresh to your turnover.

Espresso

Deep caramel, dark chocolate, low acidity

Developed for body and sweetness that holds up under milk. Dialled to your machine so the same shot lands cup after cup.

Filter

Bright fruit, florals, a clean finish

A lighter roast that keeps the origin's character intact — built for pour-over and batch brew where clarity matters.

Omni

Balanced, sweet, versatile

One roast that pulls a rounded shot and brews a sweet filter cup. The easy choice for a menu that runs both.

Why buyers source direct with us

The quality is the easy part. This is why roasters and cafés choose a direct Northern Thai supplier over a broker in the middle.

  1. Direct from the farm, with the paperwork done

We buy at origin in the Chiang Mai and Chiang Rai highlands and prepare traceable, export-ready green — the farm, region, and process on record, and documentation set to clear customs in your market.

  2. A story most menus haven't poured yet

Thai specialty is still new to a lot of buyers. It gives your café or roastery a genuine single origin that regulars can't get from the usual importers.

  3. No broker in the middle

You deal with the people who know the growers, not a trader two continents away. That means straight answers on the lot, the processing, and what's actually available.

  4. Cup it before you commit

We send pre-shipment samples so your team can taste a lot and see how it roasts before a single bag ships.

  5. Volumes that fit a café or a roastery

From a few bags for a seasonal single origin to repeat container volume when you build a program around it — the same direct relationship either way.

From the Farm to Your Dock

There's a lot that can go wrong between a coffee cherry and a shipping container. Here's how we make sure it doesn't.

  1. We know the farm

It starts with a real relationship with the grower, not a broker in the middle.

  2. We pick the lot

We choose coffees by origin, character, and how they were processed.

  3. We taste it first

Nothing moves forward until it's been cupped and it earns its place.

  4. We prep and roast

Green preparation, plus custom roast development when you want it.

  5. We get it to you

Export-ready green or finished product, on its way to your dock.

Why it matters

The coffee is already good. What's usually missing is a direct, dependable way to get it.

White Canopy exists to close that gap. We keep the chain short — the farm, us, and you — so a lot that usually stays in Chiang Mai can end up in your roastery instead, with the farm and process on record the whole way there.
